Easy Vegan Parmesan Cheese

About this recipe
This vegan Parmesan cheese is a great alternative to its dairy counterpart. Though it doesn't melt, it has the flavor and texture of finely grated Parmesan. Nutritional yeast adds tangy, cheesy flavor, and walnuts are, well, nutty. A bit of mineral-rich pink salt and some seasonings deepen the flavor. And, needless to say, it is much healthier than the regular Parmesan and is super-easy to make.
Ingredients:
1 cup walnuts, chopped (I use Kirkland Signature Walnuts)
2 Tbsp. nutritional yeast (I use Anthony's Premium Nutritional Yeast Flakes, Verified Gluten Free)
1/2 tsp. pink Himalayan salt (I use Sherpa Pink Gourmet Himalayan Salt, 5 lbs Fine Grain)
Dash of garlic powder (optional)
Dash of onion powder (optional)
Instructions:
1. Prepare the ingredients.
2. Put walnuts into a food processor and grind until fine.
3. Add salt, nutritional yeast, garlic and onion powder, if using, and mix well.
4. Transfer to an airtight container and store in the fridge.
Notes:
Garlic and onion powder add a bit deeper flavor to the Vegan Parmesan cheese. If you want to try it, start with small amounts and adjust to taste. Feel free to experiment with any other seasonings you like.
Equipment needed:
Food processor (try KitchenAid KFC3511TCB 3.5 Cup Food Chopper, Flamingo)
Serving suggestion:
Serve on top of pastas, salads, soups, stews or anywhere else you would use Parmesan cheese.
